Du Moyen âge jusqu’à la fin du 19e siècle, l’eau et le vent approvisionnaient de nombreuses machines en énergie. Dans les plaines d’Europe du Nord-Ouest, le moulin à vent dominait. Au 18e siècle, il y avait près de mille moulins au bord de la rivière Zaan, près de la métropole commerciale Amsterdam. Ils transformaient le bois, la farine et le papier, de même que les matières premières provenant d’outre-mer, comme le tabac ou le cacao.
